Topanito Tequila is produced at Destiladora Del Valle de Tequila based in Tequila town, Jalisco, which is also known as the legendary Casa Maestri distillery, the most awarded Tequila distillery in Mexico.
Once harvested and trimmed down, the piñas (agave hearts) are slowly steamroasted in old traditional hornos (brick ovens) for 36 to 54 hours. This traditional art of “slow cooking” prevents the cooked agave from caramelizing while softening the fibers and transforming the carbohydrates into fermentable sugars. It also helps to retain the sweet natural mellow flavors. For Topanito “horno cooked agave” is combined with autoclave cooked agave on a 50/50 basis.
The sweet mash then ferments for the next 48 to 60 hours with the help of natural yeast. The resulting agave-wine contains an alcohol content of 5 to 9% ABV and full-bodied agave flavor. It is then double distilled in alembic (pot) stills in a slow process lasting five hours per batch to enrich the aroma.
The Mexican natives called the seat of their gods "Topan" and regarded tequila as a "gift from the gods". The Topanito brand stands for high-quality, authentic tequila and mezcal made from 100% agave, proving that quality does not always have to be expensive. The sugar in Topanito is obtained entirely from the maguey espadín, the espadín agave, which gives the tequila its unmistakable taste.
The aged expression of Topanito is matured for a minimum of 12 months in whisky barrels made of American white oak. The result is an amazing melange of flavours, enhancing the rough and wild young tequila with the warm smoothness of the wooden ambiance. Notes of earthy and roasted agave meet forest honey, vanilla and oak. Topanito Reposado is a great Tequila to be enjoyed neat or as ingredient for flavorful drinks and cocktails such as the Tommy’s Margarita. Aroma: vanilla,coffee, wood, spice40% abv
