These urban distillers have long since perfected their award-winning standards – both in terms of production and presentation. With their Projects, they unleash their creativity, crafting special bottlings that push the boundaries of traditional whisky making. The latest example: Starward Botrytis Cask.

Botrytis (also known as noble rot) is an ancient winemaking technique dating back to 1526. It demands the utmost care, skill, and perfect conditions. If noble rot occurs too early, it jeopardizes the yield. At the right time, however, it gives rise to some of the world's most prized wines. How? Botrytis penetrates the grape and draws out its water. What remains is a grape with a deliciously high sugar content – perfect for a dessert wine.

The Starward Botrytis Cask matures for seven years in new and charred casks that previously held Botrytis Semillon dessert wine. With luscious notes of apricot pastry and orange blossom, this single malt lingers on the palate with remarkable length and balance.
