The Dingle Distillery is located in the picturesque coastal town of Dingle on the Dingle Peninsula in the southwest of Ireland. The distillery was founded in 2012 by the three visionary entrepreneurs Oliver Hughes, Liam LaHart and Peter Mosley, who are part of the "Irish Whiskey Renaissance" movement. The distillery is one of the first independent distilleries to be established in Ireland for centuries and specializes in the production of handcrafted premium whiskeys.
Dingle Single Pot Still is shaped by Irish tradition yet defined by the individuality of its home on the Atlantic coast. The process begins in our wooden mash tun, where locally sourced malted and unmalted barley are combined in the classic pot still style. This foundation creates a spirit that is uniquely Irish and unmistakably Dingle. Maturation follows in a marriage of Bourbon, Oloroso, Pedro Ximénez Sherry, and Red Wine casks, each bringing its own depth and complexity. Influenced by Dingle’s microclimate, the whiskey evolves with patience and care, becoming a reflection of both craft and community. Hand-crafted and distinctive, it embodies the resilience and character of the place it comes from.
Nose: Fruity, sweet, notes of sun-dried raisins, dates, vanilla cream.
Taste: Fresh, fruity, warm, velvety, notes of syrup, dark cherries, nuts, caramel, chocolate.
Finish: Long lasting.
