Cask-Strong & Limited Editions from Thomson Whisky
Independence means being able to do what you want, how you want. For Mathew and Rachael Thomson, this means creating New Zealand whisky from regional ingredients, paving the way for the category in their homeland. In their small craft distillery, they have been realizing since 2014 what Mathew had been experimenting with for years: rare malt whiskies with smoky aromas from South Island peat or manuka wood.
For their multi-award-winning blended whisky, Two Tone, select New Zealand and imported whiskies mature in two types of casks: European oak casks that previously held New Zealand red wine, and bourbon barrels. The result? A taste of sea air, caramelized fruits, red berries, apricot, and spices.
