Koval was founded in Chicago in 2008. Their bottlings are certified as "organic" and kosher in America. The distillates mature in gallon barrels (113.55 litres) and are bottled as single casks.
Millet is used for the mash instead of the usual addition of rye or wheat.
Tasting notes:
Colour: Light amber.
Nose: Notes of mango chutney, vanilla.
Taste: Sweet, notes of apricot pudding.
Finish: Long lasting, notes of peppery caramel, tobacco, notes of cloves.
