Behind this blended malt are the Thompson Bros of the Dornoch Distillery, who are realizing their vision of quality in a former fire station in the north of Scotland. The name SRV5 refers directly to its place of origin on Station Road and to the specific vatting cask—number 5. Inside this 1,200-liter European oak vessel, distillates from the Highlands, Speyside, and Islay—all matured for at least eight years—are married together. What makes it unique is the Solera process employed: for each bottling, only a portion of the contents is drawn off, while the remainder stays in the cask and is topped up with new single malts, creating a fascinating aromatic complexity. 48.5% ABV.

In the glass, the whisky displays a natural, golden-yellow hue, achieved entirely without the use of coloring agents. The bouquet opens with a complex array of juicy Galia melon, apricot, and green apple, accompanied by a surprising lightness reminiscent of lemongrass and cucumber. On the palate, it reveals an impressive texture—often described by connoisseurs as pleasantly waxy—where yellow plums meet the tart, savory notes of capers and thyme, while a delicate, well-integrated peat smoke underpins the aromatic structure without overpowering the fruit notes.
