The Weller 12 year old is a wheated bourbon whiskey that is characterized by an above-average maturation period. Wheated bourbon replaces the rye usually used with wheat, which gives the whiskey a softer consistency and often nutty and less acidic flavor profiles.
William Larue Weller was the first in Kentucky to use wheat instead of rye together with corn for whiskey production. The company was founded in 1849 and during Prohibition Weller merged with the Stitzel Distillery to form the Stitzel-Weller Distillery.
