Edradour, recognized as Scotland’s smallest traditional distillery since its foundation around 1825, operates largely using 19th century methods. A unique preservation of the old farmhouse distillery style, Edradour produces 12 casks of whisky a week. Owned since 2002 by Andrew Symington, the founder of Signatory, Edradour has expanded its range to include new bottlings, including the peaty malts under the Ballechin name.
Signatory founder Andrew Symington works closely with the South Tyrolean winery St. Michael-Eppan, which has resulted in a fascinating series of single cask bottlings from red wine casks. In this particular case, two twin Sauvignon casks were used for pre-fining, giving the whisky unique aromas and character traits.
