The Balvenie Distillery, which has been producing high-quality whisky since 1892, still preserves many traditional methods in its production process. For example, the barley is still grown on site and the distillery uses a traditional malting floor – a rarity in the modern whisky industry. The production process of Balvenie 18 Years Pedro Ximenez Sherry Cask begins with the careful selection of American oak casks in which the whisky is initially matured for 18 years.
