On the wild and romantic coast of the Isle of Skye, south of Dunvegan, lies the picturesque, snow-white Talisker distillery, which was founded by two brothers in 1831. After their deaths, numerous successors tried to successfully continue the distillery, but all failed. Only a financial manager and a wine and spirits merchant succeeded in taking over the business. After a devastating fire in 1960, the distillery was rebuilt true to the original.
The production process for Talisker 10 Year Old, which is based on centuries-old traditions, begins with the malting of the barley, which is soaked in water and allowed to germinate. After the barley has been dried over peat fires to obtain the typical smoky flavor, it is ground into meal and mixed with hot water, creating the sweet liquid known as wort. Yeast is added to this wort to start the fermentation process, which takes around two days.
Once fermentation is complete, the resulting liquid, known as the wash, is distilled twice in copper stills. The whisky is then stored in oak barrels for at least 10 years, giving it time to develop its aromas and gain complexity.
