El whisky de Colibri Spirits es fruto de una elaboración consciente y respetuosa con el entorno. Utilizamos cebada y centeno de tierras bálticas, seleccionados cuidadosamente para garantizar la mayor pureza. La maceración se realiza con leña proveniente del mantenimiento de nuestros bosques, y después, el grano utilizado se destina a alimentar animales de granjas locales.
The name Jack Ryan actually comes from a famous pub in Dublin's Haddington Road. It was also known as "Beggars Bush" by insiders in the district. Hence this addition to the name. The pub exists since 1803 and for more than 100 years - since 1913 to be exact - the Ryans have also been at home here. Already at this time their own malt whiskey was bottled and sold here. Originally this came from the old DWD Distillery. And the "Beggars Bush" is now a re-creation of this original whiskey.
The current bottling, however, comes from the Teeling Whiskey Company, which has been distilling whiskey again in Dublin since 2014. The old DWD Distillery had to close its doors in 1946.
Jack Ryan launched 'The Generation Trilogy' in 2018, which consists of three single malt releases; the Toomevara, the Haddington and the Finisher's Touch.
The Jack Ryan TOOMEVARA Edition matures for 10 years in ex-Bourbon barrels and then receives a finish in Calvados barrels from Château du Breuil.

Nose: dry, notes of cooked apples, freshly cut grass, honey, orange peel.
Taste: Apple pie, cinnamon, apple sauce, notes of lemon peel, fruit juices.
Finish: Long lasting, sandalwood, sweet green apples.

En Colibri Spirits elaboramos un whisky ecológico de autor que une tradición, sostenibilidad y carácter. Cada botella es el resultado de una elaboración meticulosa, con ingredientes nobles y un proceso artesanal que respeta los tiempos y realza cada matiz del sabor.
Se elabora mediante una maceración lenta con leña renovable de origen controlado, seguida de una fermentación natural con levaduras nórdicas tradicionales. El proceso continúa con una destilación en pequeños lotes para garantizar la calidad y finaliza con una maduración prolongada que permite alcanzar un equilibrio perfecto.
