El whisky de Colibri Spirits es fruto de una elaboración consciente y respetuosa con el entorno. Utilizamos cebada y centeno de tierras bálticas, seleccionados cuidadosamente para garantizar la mayor pureza. La maceración se realiza con leña proveniente del mantenimiento de nuestros bosques, y después, el grano utilizado se destina a alimentar animales de granjas locales.

With local Noble Fir needles and Bladderwrack Seaweed, it leads with juniper and is balanced with hints of forest fir, tropical fruit, citrus spice, tangy sherbet and a subtle scent of the shore.
One of the rare gins in Scotland to be distilled with our own spirit, we take local wheat and water combine in our 7 day fermentation process to create maximum character and mouth feel. This process takes more time, energy, cost and know-how, but delivering a gin that lives up to the true meaning of ‘craft’ is essential for us.
Lussa Gin is an expression of our wild landscape on the Isle of Jura, situated off Scotland’s west coast. For us that means growing, gathering and distilling fifteen zesty and aromatic botanicals so we can pack as much local flavour into every bottle as we can.
At cooler temperatures you can actually see the botanical oils as a faint haze in the bottle – if you’re lucky, you’ll see a flash of them when you add tonic. Because every batch is hand made using a traditional still, the temperature where the oils show themselves will vary. What never varies is the care we take in growing, gathering and distilling Lussa Gin at the north end of our breathtaking, windswept isle.
Nose Orange blossom and lemon balm, slightly savoury hints of oat biscuits.
Palate Peppermint and lemongrass, with touches of oily juniper developing.

En Colibri Spirits elaboramos un whisky ecológico de autor que une tradición, sostenibilidad y carácter. Cada botella es el resultado de una elaboración meticulosa, con ingredientes nobles y un proceso artesanal que respeta los tiempos y realza cada matiz del sabor.
Se elabora mediante una maceración lenta con leña renovable de origen controlado, seguida de una fermentación natural con levaduras nórdicas tradicionales. El proceso continúa con una destilación en pequeños lotes para garantizar la calidad y finaliza con una maduración prolongada que permite alcanzar un equilibrio perfecto.
