The Clonakilty Distillery was founded in 2017 and is located in the picturesque town of Clonakilty on the south coast of Ireland. The Clonakilty Singe Pot Still Irish Whiskey is made using grain from the owner Michael Scully's family fields. The resulting pot still distillate was stored in a warehouse above the Atlantic coast, not far from the fields. For the subsequent cask maturation, the team led by Head Distiller Oisín Mulcahy opted for a combination of ex-bourbon casks as well as amontillado and oloroso sherry casks.
